It’s a fun and unique pie to substitute for other traditional pies during this fall season and the upcoming holiday season it’s great to place it on the holiday table spread and have family and friends try it and walk away with a pleasant surprise that they actually like it plus it’s a teachable moment to have them venture out and try cooking something different:)

I left a lot on the vine, and several have matured to same color and smooth-skinned-ness as butternut. They’re absolutely huge, about 4 feet long, and a little intimidating. I’m hoping they resemble butternut in flavor!
