I leave the skins on and cook my plum tomatoes with onions, garlic, parsley, basil then put them in a blender so you can’t tell there are skins in it. Then freeze it.
I will try the roasted idea next AND making a sauce using my favorite Sun Gold cherry tomatoes. I can’t wait to taste the difference.
