It is delicious from May through June then the heat sizzles it. In the end of July I start more inside and plant out the end of August. The heads are lush and so happy. I harvest through November with cover. It is the best so full flavored and silky. When a major freeze threatens I pull all of it and what we cannot eat or pass around to neighbors, we saute then freeze. The freezer then has escarole for chicken stock and white beans, the perfect winter meal.

I try to interplant my veggies – like radishes and basil in with the tomatoes. And peas followed by cucumbers growing on the pea fence.
